Bourbon Apricot Shrimp

Here's the recipe for my Bourbon Apricot Shrimp that I made for dinner tonight. For the sauce you'll need a cup of halved apricots, half a cup of bourbon, three tablespoons of crushed red pepper and 3 tablespoons of brown sugar. Put everything into a sauce pan and simmer for about 10 minutes. After the sauce cools pour it into a food processor and pulse until smooth. Prepare the shrimp in a pan with little butter or oil. Sprinkle with salt and pepper to taste and then spoon sauce over the plated shrimp.

Buffalo Chicken and Serrano & Parmesan Ravioli

A couple of days ago we made a batch of ravioli from scratch. Half of the ravioli were filled with Serrano Ham and Parmesan Cheese while the rest were filled with Buffalo Chicken. I took a couple pictures:

Bourbon Balsamic Chicken Saltimbocca

A few months back we made a more traditional version of Chicken Saltimbocca. This time around we did things a little differently, using only what we had in the fridge. For starters, we used Serrano ham instead of Prosciutto, Bourbon instead of white wine and crushed red pepper instead of sage. Also, there was a bit more garlic this time around and, of course, the Balsamic vinegar. Prep was pretty much the same as last time, just put a little flour on the chicken cutlet, wrap it in Serrano ham and cook it in a pan with olive oil and garlic. Afterwards, pour some Bourbon in your pan and reduce it down. Throw it all on a plate and this is what you end up with...

Pesto Steak Pinwheels with Quinoa, Corn and Black Beans

Here are some pictures of a steak pinwheel and quinoa dish we made last weekend. Total prep time was about 40 minutes.

Homemade Turkey Pita Burgers and Italian Bread from Scratch

This weekend we made pitas and a loaf of Italian bread from scratch. To go with the pita bread we cooked up some turkey burgers with all of the usual gyro fixing.

Homefried Eggplant Sandwich

Dinner last night was a fried slice of eggplant, lettuce and tomato on a toasted bun with a little Parmesan and some Thousand Island dressing.
