Pesto Steak Pinwheels with Quinoa, Corn and Black Beans

Here are some pictures of a steak pinwheel and quinoa dish we made last weekend. Total prep time was about 40 minutes.

The steaks were filleted so they would roll easier after spreading the pesto on. I made the pesto from basil, parsley, olive oil, garlic, salt and pepper.


After rolling the steaks up and skewering them with toothpicks they were cooked in a pan with a little olive oil for a few minutes per side.


For a side dish we made a corn, quinoa and black bean warm salad. This was seasoned with garlic, cilantro, cumin and a little cayenne pepper.


Each rolled piece of steak made four pinwheels, enough to make a decent sized dinner considering how hearty the quinoa and black beans were.
