Dinner last night was a fried slice of eggplant, lettuce and tomato on a toasted bun with a little Parmesan and some Thousand Island dressing.

Here is a picture of the Bourbon glazed pork chops we had for dinner this weekend. Served with a side of potatoes au gratin. The potatoes were really good with the left over glaze.

Just a single picture this time. We made Gyros this past weekend and they were pretty delicious. The meat was cheap flank steak that marinated in olive oil, lemon juice, garlic and oregano for about six hours. The white sauce is Tzatziki, made from cucumbers, dill, garlic salt, lemon juice and Greek yogurt. It was all pretty simple, and simply delicious.

This weekend we made pulled pork sliders. It was pretty simple, just throw a pork butt in the crock pot before work and it's ready around five when you get home.

A couple weeks ago I decided to try and made a batch of bacon, egg and cheese muffins. I didn't want a homemade version of McDonald's bacon, egg and cheese biscuit... but I wanted a muffin with shredded bits of bacon, egg and cheese throughout. Here's how it turned out:
